The Stars of Michelin

In America where the thinking has always been that bigger means better, a tire company out of France, who also happens to be the world’s foremost authority on culinary expertise, is here to show us differently. Michelin doles out their coveted stars very sparingly.
My first trip to Europe as a teenager was needless to say, a very enlightening experience. While I did not grow up eating fast food, and my mother made sure that we were in tune with food other than what was considered normal for the south, I still had a lot to learn about true gastronomic delights….
The first time that I was told that we were going to dine at a “One Star” restaurant, I thought “Big deal.” I grew up in America where anything of importance or that was considered upscale had at least four stars.
What I didn’t realize at the time was that a lot of these stars are self-imposed. In other words, certain hotels and restaurants deem themselves a three or four star establishment. That is not the way that it works in the bountiful gourmet restaurants of Europe.
Michelin is the tire, yes tire, company that is based in France. Initially, it manufactured and sold tires. Once motoring became a way of life the Michelin Guide was introduced for travelers; giving aide in locating food and lodging while on the road. Michelin is now one of the world’s best known authorities on hotels, tourism and exceptional cuisine.
Obtaining and maintaining a Michelin star (or stars) is an on-going process as Michelin re-visits restaurants on a regular basis to assure the worthiness of the cuisine. The Michelin stars are awarded for one aspect of a restaurant-the food. When awarding a star the service or décor are not taken into account. However-there are five criteria for the food-quality, mastery of flavor and cooking expertise, personality of the cuisine, value and consistency.
While my mother was an excellent cook, it was not until we visited a One-Star restaurant right outside of Amsterdam, that I understood what the fuss was all about. Exceptional cuisine aside, the ambience and the service were also impeccable.
So, if you have the experience of dining at a Michelin-starred restaurant the culinary experience should teach what exactly all the fuss has been about. One Michelin star signifies “a very good restaurant in its category, two stars signify excellent cooking and worth a detour, and three stars mean exceptional cuisine and worth the journey.
